It’s been a week since I’ve posted anything. Forgive me.
I’ve been eating a lot of shrimp lately. So, why not post a recipe that has shrimp in it?! In Ellie Krieger’s The Food You Crave, she mentions that this is a perfect meal to celebrate Spring. Well, we’re about three weeks early, but I’m perfectly okay with that.
I don’t know about you, but I love, love, love bacon & corn. They’re definitely up there with Nutella. Anyway, I was looking through my Cooking Light: Fresh Food Fast recipe book and stumbled upon this great concoction.

After reading this post in my Google Reader, I started to crave it. It truly is my Filipino comfort food. Luckily for me, my mother emails me and asks me if I want to have dinner at my parents’ house this weekend. Um, hell yes! Of course I ask her for the recipe, and she starts whining.
Oh yeah! I forgot to tell you…I sent her a link to my blog this past this week and at first she was happy. The next day? Not so much. She said, “Just look up Filipino recipes online! I don’t measure, it’s all in my head!” And after an hour of bickering, she says, “Fine!” Haha. Love you, Mom.
I promise I know other dinner recipes other than Chicken, but we just bought a huge bag of individually wrapped frozen Chicken breasts from Costco.
I got this particular recipe from the recipe book that came with the Bullet Express Trio my mom got me this past Christmas. You don’t necessarily need the Trio to make this dish, btw.
Pair this versatile low-fat recipe with Roasted Vegetables and Rice, or use in other innovative ways. Shred the cooked chicken, and toss with hot cooked pasta. Create a casserole or jump-start a filling for easy enchiladas or a fast pot pie. Or splurge and spoon this dish over freshly baked biscuits.

Over the past two weeks, I’ve gone to 4 restaurants for Virginia Beach & Norfolk’s restaurant week(s). Not as many as I would have liked, but my wallet (& waistline) has already threatened to break up with me, so I didn’t want to push it.
